Cornwell<\/p>\n<p>Ingredients:<br \/>\n2 lbs large (16-20 or 21-25 count) raw shrimp, peeled and deveined<br \/>\n2-3 tbsp extra virgin olive oil<br \/>\n2 tbsp brown sugar<br \/>\n1 tbsp finely ground coffee, dark roast<br \/>\n1 tsp chipotle powder<br \/>\n3 mandarin oranges, sliced<br \/>\n\u00bd tsp kosher salt<br \/>\n\u00bd tsp freshly ground black pepper<br \/>\nPreheat the oven to 400\u00b0 F<\/p>\n<p>In a large bowl, toss shrimp, brown sugar, coffee, chipotle powder and orange slices with 2 tablespoons of the oil and the salt &amp; pepper. Add the rest of the oil if needed to coat the shrimp.<\/p>\n<p>Arrange shrimp in single layer on a lightly greased rimmed sheet pan, ensuring orange slices are spread evenly throughout.
