5 to 6 cups Vegetables of your choice.
For 4 Servings I take
Onion 1 big in size
Colorful pepper Red Green Yellow Orange 1/2 of each
Mushrooms 1 giant or 3 button
Vegetables like zucchini, squash & Eggplant can be added as well.
For Mexican Seasoning:
2-3 tablespoons chili powder
1 tablespoon paprika (use smoked paprika for a smokey twist)
1 tablespoon cayenne pepper
1 tablespoon ground cumin
1 tablespoon ground coriander if available
1 tablespoon cocoa powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 to 2 tablespoon Dried Oregano
1 tablespoon salt
1 tablespoon Black pepper powder
1/2 tablespoon red pepper flakes (I usually don’t mix in seasoning but add while preparing recipe)
1/4 teaspoon ground cinnamon – My family don’t like the flavor of Cinnamon in this seasoning so I don’t add but if you love the flavor of cinnamon, I highly recommend to add. #bhavnaskitchen
