This simple and delicious galette recipe is perfect for celebrations, and is easy enough for weeknight dessert cravings too. The filling is full of fruit and warm spice, with a touch of freshness that makes it our favorite galette recipe.

Ingredients:
3 small baking apples about 400g total weight, peeled, cored, and sliced thin
1 cup prunes pitted & halved
1 ½ teaspoon cinnamon
½ teaspoon kosher salt
⅓ cup sugar
1 tablespoon apple cider vinegar
1 tablespoon arrowroot
2 tablespoon small rosemary sprigs or fresh thyme
1 egg yolk lightly beaten
1 tablespoon turbinado sugar
1 Gluten-Free Pie Crust or your favorite pie crust
Directions:
Preheat the oven to 375°F (190°C).
In a large bowl, combine the sliced apples, halved prunes, cinnamon, salt, and sugar. Toss to combine, then stir in the apple cider vinegar to coat. Sprinkle in the arrow root and toss again to mix evenly and remove any clumps.
Flour a large piece of parchment paper with a gluten-free flour mix, then roll out the pie crust to about 16 inches (40 cm)–it will crack as you work with it, but the dough is easy to repair and you can patch any gaps with trimmings.
Arrange the apple slices in a circular pattern in the center of the dough, leaving a 2-inch gap around the edges. Top the apples with the prunes, then pour over the remaining syrup from the bowl. Dot with rosemary sprigs.
Gently fold the edges of the dough towards the center of the galette, creating small overlaps as you make your way around the pie, and sealing any cracks that form. Brush the egg yolk over the dough, then sprinkle with the turbinado sugar.
Transfer the parchment paper and galette to a sheet pan, then bake for 40-45 minutes, until the top is golden brown and the dough has firmly set. Serve warm or at room temperature!
